Ingredients

Units Scale

For the Marinade:

  • 1/4 cup soy sauce
  • 1 tbsp ginger paste (or freshly grated ginger)
  • 4 tbsp brown sugar substitute
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • 1 red chili, sliced
  • 4 cloves garlic, minced
  • OPTIONAL - 1/8 tsp xantham gum and handful of sesame seeds

For the Salmon:

  • 14-16 oz salmon fillets, cut into 1-inch cubes

For the Garnish:

  • sesame seeds
  • sliced serrano pepper
  • sliced green onion

Instructions

  1. Cut the salmon into bite-size cubes. Set aside.
  2. Prepare the marinade by mixing the teriyaki ingredients together.
  3. Mix the salmon into the marinade, cover, and marinate for 15-30 minutes.
  4. In a large pan with a little oil, pour in the marinade and add a handful of sesame seeds (if using).
  5. Mix together until it starts to bubble and gets thicker/saucier.  IF the sauce does not thicken enough for your liking, whisk in about 1/8 tsp of xantham gum into the liquid portion of the dish by carefully moving the salmon bites out of the way.
  6. Add the salmon and fry for a couple of minutes on each side.
  7. Take off the heat and garnish with more sesame seeds, spring onion and sliced red chili peppers.
  8. Enjoy!
