I can not believe that it took me this long to make curry sweet potato fries. These are absolutely delicious and easy to make. By adding curry powder containing turmeric and curcumin, these sweet potato fries take fries to a new nutritional level!

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 large sweet potatoes, cut into french fries
  • 1 tbsp olive oil or avocado oil
  • 3 tsp curry powder
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions

Oven Method

  1. Cut sweet potatoes and place in a large bowl of water for 30 mins - 2 hours
  2. Preheat oven to 400 degrees F.  Drain fries and place in a large mixing bowl, add oil and toss to coat.
  3. In a separate small bowl, mix curry powder, salt and pepper.  Add spices to fries and mix to evenly coat.
  4. Place on baking sheet and put in oven for 40 minutes or until cooked.

Air Fryer

  1. Repeat steps 1-3.
  2. Generously spray air fryer basket with avocado spray.  Place fries in basket and cook at 400 for 30 minutes, shaking fries every 10 minutes.
