Easy, delicious and healthy, this quick and simple Blueberry Greek Yogurt tart is so good. Perfect for a summer barbecue!

Ingredients

  • 1 graham cracker crust
  • 250 g blueberries
  • 400 g 0% plain greek yogurt
  • 1 egg
  • 1/4 cup sugar (I use erythritol to keep it sugar-free)
  • 1 tsp vanilla
  • 1/4 tsp cardamom

Instructions

  1. Prepare the crust.  
  2. While crust is baking, whisk the strained greek yogurt with the all the ingredients except the blueberries.  Set aside.
  3. When crust has cooked, cover with blueberries.  Pour the greek yogurt mixture over the berries.  If mixture is thick, simply use a spatula to gently spread the mixture over the berries.
  4. Return the tart to the oven and bake for an additional 25 minutes.

  • make sure all your ingredients are at room temperature
  • nutritional information is for fat free greek yogurt that I strained as well as for erythritol.
