Whole30 Grain-free Plant-Based Burgers

With all the plant-based burger rage, I knew I had to come up with my own healthy recipe for Whole30 Grain-free Plant-Based Burgers.  By combining jackfruit, beets and coconut flour, you too can make a healthier version of the store-bought plant-based burger.

Ingredients

  • 9.9 oz (280g) drained young jackfruit
  • 2 small beets, cooked
  • 1-2 tbsp Montreal Steak Spice
  • 1 tbsp coconut aminos (or soy sauce)
  • 1 tbsp flax meal
  • 5 tbsp coconut flour
  • 1/2 tsp baking soda

Instructions

  1. In a food processor, add beets, flax, Montreal Steak Spice, coconut aminos and baking soda.  Turn the processor on and process until the beets are pureed.
  2. Add in the coconut flour and process until incoporated.
  3. Add in the drained jackfruit and pulse until the jackfruit has been broken down but still has some texture.  Make sure you stop pulsing when the desired consistency has been achieved.
  4. Divide mixture into 6 and roll into round balls between the palms of your hands.  Flatten each ball to form the "burger" patty.
  5. If using, set air fryer to 400 degrees.  Grease bottom of the basket and add in 4 patties (or more if your air fryer is large enough).
  6. Fry for 15 minutes, turning patties over at the half way point.
