For the Sugar-free Simple Syrup:
- 1 cup water
- 1 1/4 cup allulose
- 1/8 tsp xanthan gum
For the Southside Cocktail:
- 1 oz lime juice (or lemon juice)
- 1 oz sugar-free simple syrup
- 5 mint leaves
Instructions
- In a small saucepan, combine 1 cup water with 1 1/4 cup allulose. Bring the mixture to a boil and remove from heat. Whisk in 1/8 tsp xanthan gum and set the sugar-free simple syrup aside to cool fully and then place it in the fridge in an airtight container until ready to use.
- Add the mint leaves and lime juice (or lemon juice) into a shaker and gently muddle. Add the gin and simple syrup and fill with ice. Shake until well-chilled.
- Strain into a chilled cocktail glass or in a glass with a few ice cubes, and garnish with a mint leaf.
