Hungarian wax or banana peppers can be used to make these easy and delicious vegetarian stuffed peppers. Ricotta cheese, Parmesan and egg make delicious gluten-free, keto stuffed pepper.

Ingredients

  • 2 Hungarian wax peppers
  • 1 egg, beaten
  • 1 cup ricotta cheese
  • 1/4 cup Parmesan cheese
  • 1 tbsp minced garlic
  • 1/4 cup fresh basil (or 1 tbsp dried basil)
  • 2 tsp oregano
  • 2 tsp parsley
  • 1 tsp salt

Instructions

  1. Preheat oven to 350.  Line a 9 x 9 baking dish with foil and set aside.
  2. Divide peppers in half and remove seeds.  Set aside
  3. In a small bowl, combine egg, ricotta, Parmesan and all spices.  Spread mixture evenly between peppers and place in the oven for 30 minutes.
