Sugar-Free Lemon Simple Syrup

Ingredients

  • 1 cup lemon juice (from about 10 large lemons, preferably Meyer lemons)
  • 1 1/4 cup allulose
  • Optional- 3-5 basil, mint or other fresh herb leaves
  • Additional monk fruit drops or more allulose to taste (I added 5 drops of liquid monk fruit since I like my simple syrup really sweet!)

Instructions

  1. Add the lemon juice, allulose and herbs (if using) to a small saucepan.  Bring the mixture to a boil and then reduce the heat to a simmer.
  2. Simmer for 20 minutes.  Strain out the herbs (if used) and allow to cool before storing it in an airtight container in the fridge.

Notes

*You can always add more sweetener (either in powdered form or liquid) to suit your tastes. If you find this sugar-free simple syrup too sweet, simply add a little water to the mixture to dilute it*
