This Slow Cooker Keto Chicken Marsala recipe has juicy chicken that’s smothered in a thick and creamy mushroom sauce that encompasses the flavour and consistency of gravy.  The perfect recipe for an easy low carb dinner that the entire family will love!

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp poultry seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 cups sliced fresh mushrooms
  • 1 cup dry marsala wine
  • 1/2 cup heavy cream
  • 1 tbps butter, salted
  • 1/4 tsp xantham gum
  • OPTIONAL - 2 tbsp marsala wine (or marsala cooking wine), salt and pepper

Instructions

  1. Brown the Chicken: This is purely optional and can be done directly in the slow cooker pot (if you are using an all-in-one like my Ninja Foodi) or use a large saute pan. To brown the chicken, pat the chicken dry and sprinkle the chicken with the poultry seasoning, garlic, salt and pepper. Heat the pot on medium-high heat and add the olive oil. Once the oil has been heated, the chicken and heat for 1-2 minutes on each side or until brown.
  2. Cook the chicken: Add in the mushrooms and the Marsala wine to the slow cooker. Set the slow cooker on "low" and cook for about 3-4 hours or until the chicken is no longer pink and registers 165 degrees F. The chicken will take 3 hours if you brown it first and 4 hours if you do not.
  3. Make the Sauce: To make the sauce remove the chicken from the pot and place it on a serving dish. Push the mushrooms to one side of the slow cooker. Set the slow cooker on "high" and add the heavy cream and butter.  Stir until the butter has fully melted.  Sprinkle the xanthan gum into the liquid while whisking. Whisk until the sauce thickens. Taste the mixture and add 1-2 tablespoons of additional marsala wine or marsala cooking wine to suit your taste. Also, add additional salt and pepper if needed. Pour the hot marsala sauce and mushrooms over the chicken and serve.

Notes

  • chicken cooking time will vary - if you brown the chicken and the slow cooker is already hot, it will only take about 3 hours. If you do not brown the chicken and the chicken is cold to start, it will take about 4 hours.
