- 6 slices center-cut bacon, chopped
- 1 cup onion, chopped
- 3 tbsp brown sugar substitute
- 1 tsp smoked paprika
- 1 tsp soy sauce
- 8 oz goat cheese
- 4 oz cream cheese, softened
- 1 tbsp olive oil
- 1/2-1 tsp Morton's Kosher Salt
- Fresh thyme leaves
Instructions
- Cook the chopped bacon in a 10-inch skillet over medium heat, stirring occassionally, until the bacon begins to crisp along the edges, about 8 minutes.
- Add the chopped onion to the skillet and cook, stirring frequently, on medium heat until the onions turn golden brown, about 8 minutes.
- Stir in the brown sugar substitute, smoked paprika and the soy sauce into the bacon mixuter. Cook, stirring constantly, until the mixture thickens and becomes syrupy, about 30-60 seconds. Remove from heat and tranfer the bacon jam to a small bowl. Allow the jam to cool for about 5 mintues.
- Beat the goat cheese, softened cream cheese, oil and salt with an electric mixer with the whisk attachment on medium sepped until smooth, about 30 seconds. Taste the mixture and add additional salt if needed.
- Spread the goat cheese mixture inside a shallow bowl. Top with the bacon jam and garnish with thyme leaves.
