- 1 cup Catalina Crunch Graham Cracker cereal
- 1/2 cup freeze-dried sugar-free marshmallows
- 1/2 cup Casein Vanilla protein powder (or chocolate)
- 1/2 cup sugar-free chocolate chips
- 2 tbsp coconut oil
Instructions
- Place the cereal in a bag and using your hands or a rolling pin, break the cereal down to smaller chunks.
- Add the cereal, marshmallows and casein protein powder to a bowl and mix to incorporate. Set the bowl to the side.
- In a glass measuring cup, add the coconut oil and sugar-free chocolate chips. Melt in the microwave for 30 seconds. Stir until chocolate is fully melted. If chocolate does not fully melt, return to the microwave for an additional 15 seconds.
- Pour the chocolate mixture over the cereal mixture. Stir until covered. Using a small cookie scoop, scoop the mixture onto a parchment lined baking sheet. Place in the fridge to firm.
