Velveting chicken is a trick up your sleeve that you will use the rest of your life! If you have avoided making stir-fries (I know I had!) since the chicken always turned out less then stellar, I am here today to show you how with one easy step, velveting chicken turns out super moist and juicy.

Ingredients

  • 1 lb (453 grams) chicken breast, boneless, skinless
  • 2 tsp baking soda

Instructions

  1. Cut or slice the chicken breasts into the size you desire and place the chicken in a bowl.  Add the baking soda and toss to coat the chicken.  Place the chicken in the fridge for 20 minutes if using chicken strips or 30 minutes for chicken chunks.
  2. Once time has elapsed, rinse the chicken thoroughly, making sure to remove all the baking soda.
  3. Pat the chicken dry and use it in any recipe!
