- 1/2 cup unsalted butter
- 14 grams (1 tbsp) cream cheese
- 1 1/2 cup almond flour
- 3/4 cup Swerve Confectioner sweetener
- 1/8 tsp salt
- 90 g egg whites
- 1/2 tsp vanilla
- 24 small raspberries
Instructions
- Place the butter in a small saucepan. Melt over medium heat. Continue cooking until butter is boiling and turns golden brown and smells nutty, about 8 minutes. Pour into a bowl and cool for 30 minutes.
- Preheat the oven to 400 F. Dip a pastry brush into the browned butter and brush each mini muffin well with the butter, making sure to cover the bottom and the sides well with the butter. Repeat this process one more time just to make sure all sides and bottoms of the muffin wells are fully covered with butter (if you don't, the Financiers will stick to the tin!)
- Add the room-temperature cream cheese to the remaining browned butter and whisk to incorporate.
- In a large mixing bowl, whisk together the powdered sweetener, almond flour, and salt. Add the egg whites, vanilla, and cooled browned butter mixture. Whisk together until just combined. (The batter will be thick.)
- Divide the batter among the greased muffin pan cups, filling each approximately 3/4 up the muffin well. Bake for about 4 minutes (the batter is set around the edges but still soft in the center). Remove from the oven and gently place one or two fresh raspberries on top of each.
- Bake a further 7-9 minutes or until the Financiers have become golden brown around the edges and are springy to the touch. Remove from oven and let cool on a wire rack.
- Let cool in the pan for 10 minutes. Remove and cool completely on a wire rack.

- Make sure to grease your mini muffin pan REALLY well
- I like to pipe my cookie batter into each muffin well
