For the crunchy base:
- 1/4 cup nut or seed butter
- 1/4 cup almond milk
- 1 tbsp coconut oil, melted
- 1/2 cup vanilla or other flavoured whey protein powder
- 1/2 cup unsweetened shredded coconut or keto cereal crisps (chopped)
- allulose or monk fruit sweetener to taste
- Pinch sea salt
For the Colostrum Caramel Layer:
- 1/4 cup nut or seed butter (or coconut oil for dairy-free)
- 1 tbsp almond milk
- 2 tbsp sugar-free maple syrup
- 2 tbsp colostrum powder
- 2 tbsp Naked Nutrition Caramel Collagen (or replace with more colostrum)
- Pinch of sea salt
For the chocolate topping:
- 1/2 cup sugar-free chocolate chips
- 1 tbsp coconut oil
Instructions
- In a medium bowl, mix nut butter, melted coconut oil, and almond milk. Add whey (or collagen), shredded coconut/soy crisps or cereal,and salt. Stir until a dough forms. If dough is too sticky, add addtional protein powder or almond flour. Taste and add additional sweetener to suit your taste. Press the mixture evenly into your silicone protein bar molds—filling about 1/4 of each cavity. Place molds in the freezer for 10–15 minutes while preparing the next layer.
- In a small microwave bowl or large measuring cup, melt the nut butter, almond milk and sugar-free maple syrup. Microwave for 30 seconds or until nut butter has melted. Stir and add the colostrum and collagen (if using) into the mixture. Taste and add a pinch of salt or additional sweetener if needed. Spread the caramel mixture evenly over the chilled base layer in each mold.
- Place in fridge.
- Place the sugar-free chocolate chips in a microwaveable bowl. Add the coconut oil and heat for 30 seconds. Stir until chocolate has fully melted (if chocolate has not melted, return to the microwave for 10-15 seconds).
- Carefully pour the chocolate topping over each bar. Let the bars sit at room temperature for 30 minutes before placing them in the fridge to fully harden.
- Store bars in an airtight container in the fridge for up to 2 weeks.
