By simply combining some pumpkin, pea protein powder and a couple of other ingredients, you can make Pumpkin Pie Protein Bites at home for a fraction of the cost to buy them in the store.

Ingredients

  • 1 cup pumpkin puree
  • 5-6 scoops vanilla pea protein powder
  • 2-3 tsp pumpkin pie spice
  • 2-3 tsp cinnamon
  • 1/8-1/4th tsp salt
  • 2-4 tbsp brown sugar (depending on the how sweet your protein powder is)
  • 2-4 tbsp coconut flour
  • 1-2 turmeric capsules (optional)
  • 10-15 mini chocolate chips

Instructions

  1. In a large mixing bowl, combine the protein powder, pumpkin pie spice, cinnamon, salt, brown sugar and turmeric capsules (if using).  Whisk everything together.
  2. Add pumpkin puree and stir to combine.  Add coconut flour, 1 tbsp at a time until the mixture can be rolled into a ball.
  3. Taking 1-2 tbsp of mixture, roll it into a ball.  Using a toothpick, indent sections of the ball and top with a chocolate chip.
  4. Store in the fridge.
