Ingredients
- 16 oz cod (or other white flaky fish), thawed
- 2 eggs
- 3- 4 tbsp egg white powder*
- 1 tbsp collagen powder
- 1-2 tbsp coconut flour **
- 1 tbsp mayo***
- 1 tbsp dill pickle relish
- 1-2 tbsp chopped onion(or 1 tsp onion powder)
- 1 tsp garlic
- 1 tsp smoked paprika
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Place the fish in a food processor and process until a paste is formed
- Add in all the ingredients and process for an additional 1-2 minutes
- Place mixture in the fridge to firm up for about 10 minutes
- Form fish mixture into balls, rolling between palms of your hands to make sure they are tightly packed. I used got 17 bites total.
- Place 8 bites in the air fryer. Spray the tops with cooking spray and set for 8 minutes at 350 degrees. Half way through, open lid, turn bites and spray again.
- Repeat with remaining bites until all the fish bites have been cooked.
Notes
* if you do not have egg white powder, you can try using plain whey protein powder or additional coconut flour. If using coconut flour, start off adding it slowly since it can dry out the fish if too much is added.
** since different fish have varying amounts of water, you may need to add additional coconut flour. Start with 3 tbsp and if you can not roll fish into a ball type shape, add an additional tablespoon.
***keep the mayo low for PSMF diet but feel free to increase the amount for a keto diet.
