Low Carb Frangipane Apple Tart - Gluten-free and Sugar-free

This Low Carb Frangipane Apple Tart is unique and elegant yet simple to make.  Making a simple gluten-free and sugar-free Frangipane base and adding diced apples and roasted walnuts, this Gluten-Free Frangipane Apple Tart was ready to bake in under 20 minutes.

Ingredients

  • Optional - 1 pie crust
  • 4-6 oz apple, diced and unpeeled
  • 1 cup roasted walnuts, chopped (or any roasted nut), divided*
  • 1 (115g ) stick unsalted butter, room temperature
  • 3 eggs
  • 1 1/2 cup almond flour
  • 2/3-1 cup sweetener (depending on how sweet you like your cake)
  • 1 tsp vanilla extract
  • 1 tsp apple pie spice
  • 1/4 tsp kosher salt
  • 1/8 tsp apple extract (optional)

Instructions

  1. Preheat the oven to 350 degrees F. and line a sheet pan with aluminum foil.
  2. If using a crust, bake pie crust for 10 minutes and set aside.  Omit this step if not using a crust and instead, line a 8 or 9-inch springform pan with parchment paper on the bottom and spray the pan well with cooking spray.
  3. Dice the apples and nuts and place them to the side.
  4. Place the butter in a medium-size microwave-safe bowl and cover a damp paper towel. Cook on high power for 60-90 seconds or until the butter is melted.
  5. Allow the melted butter to cool for 5 minutes then add the sweetener and whisk until incorporated. The mixture will be a little grainy at this point.
  6. Add the eggs, one at a time, whisking well after each addition. Add the vanilla, spice, salt and extract. Stir to incorporate.   Add the almond flour and stir until fully incorporated.
  7. Lastly, fold the all but 1/4 cup of the diced apple and walnuts into the batter
  8. Transfer the mixture to the pie/tart shell or the springform pan and spread it to an even layer.
  9. Sprinkle the remaining 1/4 cup of diced apples and walnuts evenly over the top.
  10. Bake on the prepared sheet pan for 20-25 minutes OR until the top is beginning to turn a golden brown. Then cover lightly with foil and bake for another 10-15 minutes for a total of 30-40 minutes (the crustless frangipane will most likely take less time than the one with a crust). The frangipane should no longer be wobbly in the center when given a gentle shake.
