These simply delicious Keto Carrot Cake Bars are so elegant yet so easy to make!  Moist and tender cake bars with a slightly spicy flare all topped with an easy low carb cream cheese frosting...what more could you want!  Perfect for breakfast or an afternoon snack, these gluten-free and low-carb Carrot Cake Bars are absolutely divine!

Ingredients

For the Carrot Cake Bars

  • 1/2 cup coconut oil, melted
  • 3/4 cup sweetener of choice
  • 1/4 cup golden sweetener of choice
  • 1/2 cup (115 g or 4 oz) sour cream, room temperature
  • 3 eggs, room temperature
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup whey protein isolate, plain
  • 1 tbsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tbsp molasses (OPTIONAL)
  • 1 tsp vanilla
  • 1/2 cup unsweetened shredded coconut flakes (OPTIONAL)
  • 2 cups grated carrots

For the Cream Cheese Decoration

  • 4 tbsp cream cheese, softened
  • 2 tbsp sour cream
  • 4 tbsp powdered sweetener

 

Instructions

  1. Preheat the oven to 350 degrees F.  Grease an 8 x 8 baking dish well with cooking spray and set it aside.
  2. In a large bowl, combine the coconut oil, sour cream and eggs.  Beat on high speed until incorporated.  Add in sweeteners and beat for about 1 minute.  Add in the almond flour, coconut flour, whey protein powder, salt, cinnamon, nutmeg, vanilla and allspice.  Beat for about 1-2 minutes.  Beat in the baking soda.
  3. Add the shredded carrots and coconut (optional) and stir until everything is combined.  Spread the mixture into the greased baking dish.
  4. Prepare the cream cheese frosting by beating all the ingredients together.  Pour the frosting into a small ziplock bag and snip off a tiny piece of one of the ziplock bag corners with a pair of scissors.
  5. Carefully draw diagonal lines across the top of the carrot cake bars.
  6. Place the bars in the oven for about 30 - 35 minutes or until the edges just begin to brown.

Notes

  • make sure all your ingredients are at room temperature; otherwise, the coconut oil could solidify if it comes into contact with a cold ingredient.
