Roasting peppers in the oven could not be any easier. Bring out the depth of a pepper by combining it with a little olive oil and baking it in the oven. The skin literally peels right off and delivers the most delicious tasting peppers ever.

  • Total Time: 25 minutes

Ingredients

  • Choice of pepper
  • olive oil
  • salt

Instructions

  1. Preheat oven to 450 degrees F.  Line a baking sheet with parchment paper.
  2. In a large bowl, place peppers and coat with olive oil.  Sprinkle with salt and place on baking sheet.  If you use whole peppers, turn peppers every 5 minutes so that every side of the pepper gets roasted.  If you want to slice the peppers in half, just lay them skin side up.
  3. Bake for 15-20 minutes or until skin starts to brown.  Remove peppers from oven and cover baking dish with a drying towel for 10 minutes.
  4. Once peppers have cooled, simply peel off the skin of the pepper.

Notes

  • I use a deep baking dish so that I can easily cover my dish with a drying towel without the towel touching the peppers.
