- 3 cups walnuts
- 1 egg white
- 1 tbsp water
- 1/2 cup brown sugar substitute (or a combination of white and brown)
- 1/2 tsp salt
- 2 tsp cinnamon
Instructions
- Preheat oven to 300°F (149°C). Line two large baking sheets with parchment paper and spray with non-stick spray; or use a silicone baking mat. Set aside.
- Using an electric mixer, beat egg white and water on medium-high speed until stiff peaks form, about 4-5 minutes. Add the sweetener, cinnamon, and salt, gently folding until combined.
- Fold in the nuts and stir to coat completely. Spread nuts over the baking sheet and bake for 35-45 minutes, stirring every 15.
- Allow to cool completely and enjoy. Store nuts at room temperature for a few weeks, covered.
Notes
- make sure to fully beat the egg white as it will fall slightly when the sweetener is added
- watch the nuts carefully as they can burn quickly
