- 1 lb green beans, trimmed (see post of "how to trim green beans")
- 3 cloves garlic, mashed
- 1 tbsp coconut aminos (or soy sauce)
- 1 tbsp minced ginger
- 2 tsp rice vinegar
- 1 tbsp sesame oil
- 1-2 tsp toasted sesame seed (optional)
- 1-2 tsp almond slices (optional)
Instructions
- Cook beans in a 6 qt pot of salted boiling water, uncovered for 6-7 minutes or until just tender
- Drain beans in a colander and then plunge beans in an ice bath. Remove beans from ice bath and pat dry
- In a separate bowl, combine the garlic, coconut aminos, ginger, vinegar and oil. Stir to combine and then add beans and toss.
- Sprinkle with sliced almonds and sesame seeds (if using)
