Garlic Ginger Green Beans (Whole30, Paleo)

These Garlic Ginger Green Beans are cooked crisp and tender to retain their bright colour as well as their snap.

Ingredients

Units Scale
  • 1 lb green beans, trimmed (see post of "how to trim green beans")
  • 3 cloves garlic, mashed
  • 1 tbsp coconut aminos (or soy sauce)
  • 1 tbsp minced ginger
  • 2 tsp rice vinegar
  • 1 tbsp sesame oil
  • 1-2 tsp toasted sesame seed (optional)
  • 1-2 tsp almond slices (optional)

Instructions

  1. Cook beans in a 6 qt pot of salted boiling water, uncovered for 6-7 minutes or until just tender
  2. Drain beans in a colander and then plunge beans in an ice bath.  Remove beans from ice bath and pat dry
  3. In a separate bowl, combine the garlic, coconut aminos, ginger, vinegar and oil.  Stir to combine and then add beans and toss.
  4. Sprinkle with sliced almonds and sesame seeds (if using)
