  • Total Time: 35 minutes
  • Yield: 6 servings 1x

Ingredients

Units Scale
  • 2 lbs bone-in skin-on chicken quarters
  • 1 tbsp baking powder
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions

Prep the Chicken Quarters:

  1. Pat the chicken quarters dry using a paper towel.  Sprinkle the baking powder over the skin of the chicken quarters and use the fingers to rub the baking powder into the skin.
  2. Combine the garlic powder, smoked paprika, oregano, salt and black pepper in a small bowl.  Sprinkle the seasoning over all the chicken quarters, making sure to get both sides of the chicken quarter.

For Oven-Baked Chicken Quarters:

  1. Preheat the oven to 400 degrees F.  Line a baking sheet with aluminum foil and place an oven-safe rack over the baking sheet and spray well with cooking spray
  2. Place the chicken quarters skin side down on the baking sheet making sure to not over-crowd the tray
  3. Bake for 20 minutes.  Flip the chicken quarters and bake an additional 20 minutes.
  4. For extra crispy chicken,  turn on the broiler and broil on "hi" for 1- 2 minutes or until the chicken quarters crisp to your liking.

For Air Fryer Baked Chicken Quarters:

  1. Prep your air fryer basket according to the manufacturer's directions
  2. Place the chicken quarters in a single layer and stand them upright along the side of the frying basket, making sure that the skin is either facing out if the chicken is standing upright or facing down if the chicken is lying down.
  3. Turn the air fryer on at 400 degrees F. for 15 minutes
  4. Flip the chicken quarters and bake for an additional 15 minutes

Notes

  • chicken is fully cooked when it reaches a temperature of 170 degrees F.
  • if you use boneless chicken, you will need to decrease the cooking time
  • if the chicken is not cooked, add an additional 5 minutes to the time until the desired temperature has been reached.
