Easy 30-Minute Chicken Cordon Bleu Casserole - Keto and Gluten-free

There’s nothing better than a quick and mouth-watering keto weeknight dinner recipe! This easy Chicken Cordon Bleu Skillet casserole is the perfect blend of a creamy succulent mustard sauce enrobing tender chunks of chicken and ham. Add a gooey melted cheese topping and you have an easy low carb casserole ready in about 30 minutes!

Ingredients

  • 1.5 lbs boneless skinless chicken breast, cubed
  • 8 oz diced cooked ham
  • 1- 5 oz package Boursin Cheese
  • 1/2 sour cream
  • 1/4 cup dijon mustard
  • 1 tsp garlic powder
  • 1 tsp mustard powder
  • 1-2 cups (about 5 oz) shredded Jarlsberg
  • OPTIONAL - 1/4 cup bacon crumbles

Instructions

  1. Preheat the oven to 350 degrees F.  Grease a 10-12-inch oven-proof skillet and set it aside.
  2. In a large bowl, stir together the ham, chicken and 1/2 cup of cheese.  Set it aside.
  3. In a small bowl, melt together the Boursin, sour cream and 1/2 cup shredded Jarlsberg in the microwave (about 1 minute).  Stir in th dijon mustard, garlic powder and mustard powder.
  4. Add the Boursin mixture to the chicken and ham bowl and stir to incorporate the ingredients.  Take half of the chicken mixture and flatten it into the pan.  Sprinkle with 1/4 cup of cheese and layer the rest of the chicken and ham mixture.  Add any remaining cheese to the top and place the dish in the oven.
  5. Bake for 25-30 minutes or until the chicken reaches 160 degrees F.  If desired, turn the broiler on "high" for about 3-5 minutes or until the cheese just begins to brown.  Remove the dish from the oven and allow the dish to rest for about 5-10 minutes before serving.  The sauce will thicken as the dish cools.

Notes

  • serve this dish over some riced or mashed cauliflower
  • you may need to add some salt but make sure you taste the finished product first as different types of cheese have different sodium levels.
