- 2 oz Baker's chocolate, unsweetened, finely chopped
- 1/2 cup unsweetened almond milk
- 3 eggs, separated and at room temperature
- 1/4 tsp cream of tartar
- 1/8 cup Stevia
- 1/8 cup Swerve confectioner
- butter and granular erythritol for lining ramekins
Instructions
- Preheat oven to 375 degrees F. As oven is preheating, grease individual ramekins with butter and sprinkle butter with granular erythritol.
- Place chocolate in a large bowl. Warm milk until it simmers and pour over chocolate to melt. Stir milk and chocolate until fully incorporated. Let cool. Add in egg yolks and stir until fully combined.
- In a separate bowl, add egg whites and cream of tartar and sugar. Beat egg white mixture until stiff peaks form.
- Gently fold egg whites into chocolate and continue to fold carefully until fully incorporated
- Pour into greased ramekins and bake for approximately 20 minutes or until souffles have risen about 1 inch.
- Serve immediately

- Make sure to serve souffles immediately as they will fall quickly
