EASY KETO PEANUT BUTTER MARSHMALLOW TRUFFLES

These Easy Keto Peanut Butter Marshmallow Truffles are the perfect combination of my two favourite foods - peanut butter and marshmallow!

INGREDIENTS

Creamy natural peanut butter 

Sugar-free tapioca fiber syrup 

Vanilla extract 

Melt the peanut butter and sugar-free syrup in a large bowl in the microwave until melted (about 1 minute). Whisk in the collagen powder and vanilla.

INSTRUCTIONS 

Fold in the marshmallows. Using a cookie scoop (or a tablespoon), divide the mixture into 16 bites and place the bites in the freezer to firm, about 15 minutes.

Melt the chocolate and spoon the chocolate over each keto peanut butter truffle. Place in the fridge until the chocolate hardens.
