Keto Coconut Frosting without Eggs!
This keto coconut frosting without eggs is perfect for so many things! Use it as the filling of your favourite roll cake, as frosting on cupcakes or even spread it on some toast for breakfast! Versatile, easy and delicious.
This quick sugar-free frosting was created out of sheer desperation when I was craving a keto German cake and did not have any eggs left after baking the cake!
Knowing perfectly well that you can not POSSIBLY call a cake a "German" chocolate cake without the traditional coconut pecan frosting, I decided to see if I could create an eggless coconut pecan frosting that would rival any Southern baker's traditional coconut pecan frosting.
Although I could have filled my chocolate roll with any number of frostings, like this Homemade Sugar-Free Marshmallow Fluff Frosting or this Keto Cookie Dough Frosting, my brain did not want either option.
So, with a couple of modifications (since all coconut pecan frosting contains up to 6 egg yolks!), I was able to create a delicious keto coconut frosting without using ANY eggs!
Eggless Coconut Pecan Frosting Ingredients
To make this easy keto frosting, you will need the following:
- Pecans - Make sure you chop your pecans into smaller pieces so that the frosting is easily spreadable. Toasting the nuts for a nutty crunch in each bite.
- Coconut - Coconut not only adds flavour but also texture to this easy keto frosting. Make sure you use unsweetened shredded coconut and not sweetened or coconut flakes.
- Heavy Cream - Heavy cream adds the thickness we need for making this keto coconut frosting without eggs.
- Sweetener - My favourite sugar-free sweetener for making this keto coconut pecan frosting is Truvia Sweet Complete. The slight addition of molasses gives this frosting a hint of caramel flavour.
- Butter- You can use salted or unsalted butter. If using unsalted butter, add a pinch of salt to taste at the end of cooking.
- Xanthan Gum - This is the perfect ingredient for replacing the eggs. It adds the gooeyness we all love when it comes to this frosting.
- Vanilla extract - Enhances the flavour of the frosting.
How To Make Quick Sugar-free Frosting
This recipe is really is truly a VERY easy keto frosting recipe. Since the pecans and coconut are toasted in the same skillet that the frosting is made in, that also means that there is only one dish to clean!
Step 1 - Toast the Pecans and Coconut
- Heat a large skillet on medium-high heat and add the pecans. Stir constantly for 4 minutes or until the pecans just begin to toast. Remove the pan from the heat and add in the coconut. Stir until the coconut begins to brown. (Tip - If the coconut does not begin to brown, simply return it to the warm burner. Just be careful as the pecans and coconut can burn quickly!)
- Pour the contents into a large bowl and set the bowl to the side
Step 2 - Prepare the creamy frosting
- Using the same skillet, cook the heavy cream, brown sugar substitute, and butter, stirring constantly, for 5-8 minutes or until the mixture reaches a thin pudding-like consistency (Tip - the colour should begin to term a nice caramel shade when the frosting is ready)
Step 3 - Combine the ingredients
- Remove the skillet from the heat and pour the contents over the pecans and coconut. Stir and add in the vanilla and salt to taste.
- Let stand, stirring occasionally, until cool and spreadable.
Tips for the Best Keto Coconut Pecan Frosting
For the best frosting, keep these tips in mind:
- Toast the nuts: Toast to bring out the best flavour and texture of the nuts, and even the coconut if desired.
- Start slowly with the xanthan gum - Adding too much xanthan gum can make your frosting go from nice and thick to way too gooey. If your frosting does not thicken, you can always quick heat it in the microwave and add additional xanthan gum.
- Cool until spreadable: Don't rush the process; cool the frosting until thick and spreadable before using for a well-constructed cake.
- Add salt if using unsalted butter: The sweetness of this frosting benefits from a touch of salt.

Preheat oven to 350°F. Bake pecans 8 to 10 minutes until toasted; cool.
Can I make this easy keto frosting ahead of time?
Yes! Refrigerate the prepared frosting in an airtight container for up to five days. It can also be frozen for up to three months for longer storage. Bring to room temperature before using for a spreadable consistency.
Why is my keto coconut pecan frosting runny?
Make sure to cook the frosting to a thin pudding-like thickness and whisk in the xanthan gum thoroughly. You can test the final consistency by placing a spoonful onto a frozen plate.
Can I switch out the nuts in quick sugar-free frosting?
Walnuts or other types of nuts can be substituted in the place of the pecans. Just make sure that you roast them if they are raw and that you do not use salted nuts.
Why is my coconut pecan frosting grainy?
The sugar substitute may not have dissolved completely into the frosting while cooking, or it may have crystallized. Erythritol-only sugar substitutes will crystalize as they cool. Try heating the frosting slightly and stirring it until it smooths out.
Can I make this keto coconut pecan frosting more buttery?
Yes! Simply take an additional stick of butter and add an additional 1-2 tablespoon of heavy cream. Beat until light and fluffy. Then, fold in the keto coconut pecan frosting for a creamier frosting recipe.

Ingredients
- 1 cup chopped pecans or walnuts
- 1 ½ cups unsweetened shredded coconut
- ¾-1 cup brown sugar substitute
- ¾ cup heavy cream
- ½ cup butter
- 1 tbsp vanilla extract
- salt to taste
- ⅛-¼ teaspoon xanthan gum
Instructions
Toast the coconut and pecans
- Heat a large skillet on medium heat. Add the pecans and toast, stirring constantly, for 3 minutes. Add the coconut and continue to cook, while stirring for an additional 2 minutes or until the coconut begins to brown. Quickly remove the pan from the heat and pour the contents into a large bowl to cool.
Prepare the frosting:
- Using the same skillet, add the butter, heavy cream and brown sugar substitute and cook on medium-high heat for 5 minutes, stirring constantly. Once mixture begins to turn a nice golden colour, remove the pan from the heat and whisk in vanilla followed by xantham gum (start with ⅛ teaspoon and add additional xantham gum until desired consistency. Just remember that the frosting will thicken as it cools.)
- Pour the liquids into the bowl with the nuts and coconut and stir until fully incorporated. Taste the mixture and stir in salt to taste.
- Allow frosting to cool at room temperature until ready to use.*
Notes
* if frosting seems to thin, simply heat the frosting slightly in the microwave (about 30 seconds) and whisk in some xantham gum, ⅛ teaspoon at a time, until desired consistency is reached.
