Keto Blueberry Bars
We are going absolutely crazy over this decadent Keto Blueberry Blondies recipe. With spring in the air and summer just around the corner, nothing screams "sunshine" like fruit desserts, like my Keto Raspberry Financier cookies or this Keto Peaches and Cream Pie
I specifically moved from Canada to Florida as I am a sunshine freak and luckily, I no longer have to dream of summer days as I live them daily!
And, lucky for me, I can actually grow my own blueberries as the weather creates the perfect environment for these little blue gems.
However, for those of you who can not live in this perpetual sunshine state, I have a recipe that will have you feeling sunny and bright even on those rainy and cold spring days!
Since my blueberry bushes are loaded with fresh blueberries, I figured it was time for me to create an easy keto blueberry dessert recipe. But, if it is still too early for fresh blueberries in your area, no need to worry as frozen berries work just as well in this recipe!
So, regardless of the weather outside, grab your fresh or frozen blueberries and you will soon be able to taste sunshine in every bite!

Easy Keto Blueberry Dessert Ingredients
This recipe is one of my easiest keto dessert recipes on my blog. Below, I have listed the ingredients you will need along with possible substitutions.
Butter - This is probably one of the most important ingredients in order to get the thick "gooey" factor. I used unsalted butter but you can use salted butter and omit adding additional salt.
Brown Sugar Substitute - I used Lakanto Golden sugar substitute. Using a brown "sugar" helps to add a slight depth of flavour to the bars and a mild hint of caramel. If you don't have any brown sugar substitute, you can replace it with any other type of sugar substitute. Just remember that if you use only allulose as your sweetener, your keto blueberry bars will brown much faster.
Egg - This helps to bind the ingredients as well as helps them to rise. Make sure that your egg is at room temperature otherwise it could cause the butter to solidify.
Vanilla - You might be a little shocked by how much vanilla is added to the bars but it is necessary. Blondies are literally the vanilla version of a brownie so you want a fairly strong vanilla taste
Almond Flour, Collagen Peptides and Protein powder - Using a combination these dry ingredients helps to keep these bars nice and dense. I used Naked Collagen which is my favourite brand. I like using a protein powder that is a combination of whey, egg and casein. However, pure whey, casein or a plant-based protein powder should work as well. If you don't have collagen or protein powder, you can replace both of these with ¼ cup coconut flour, or replace both these ingredients for equal amounts of almond flour.
Salt - The main function of salt in any recipe is to enhance the flavour of the other ingredients. Its presence perks up the depth and complexity of other flavours as the ingredients meld.
Blueberries - you can either use fresh or frozen blueberries. If you use frozen blueberries, I would suggest thawing them before adding them to the blondie mixture.
Instructions for Sugar-free Blueberry Blondies
I did not shoot any progress shots as this recipe does not really need them - yes...it is REALLY that easy!
- Preheat the oven to 350 degrees F.
- Line an 8x8-inch pan with parchment paper (tip - make sure to leave an overhang to help remove the bars from the pan)
- Melt the butter in the microwave and allow it to cool
- Whisk in the sweetener into the melted butter for about 1 minute
- Next, whisk in the egg, vanilla, almond flour, collagen, protein powder and salt
- Fold in the blueberries
- Spread the mixture into the pan, sprinkle with additional blueberries if desired, and bake!
How to make gooey keto blondies
I personally like things on the dense and gooey side so I prefer to underbake these bars.
Watch the bars carefully once they get to the 25-minute mark and see if they are to your liking. Depending on the type of pan you use, the type of dry ingredients you use as well as if you increase or decrease the size of the recipe, you may need to adjust the baking time.
For me, the PERFECT time was exactly 28 minutes which yielded a super-dense blondie.
Storing Keto Blondies
These keto blueberry bars can be stored in an airtight container at room temperature for about 3 days. You can store them in the fridge for about 5-7 days.
However, if you want to make these and freeze them, you can freeze them individually and just pull one out when you get a blondie craving. To thaw the bars, simply place them on the countertop until they come to room temperature.

Ingredients
- 8 tablespoons (4 oz or 1 stick) butter, melted
- ½-⅔ cup brown sugar substitute (depending on how sweet you like your keto desserts!)
- 1 egg
- 1 tablespoons vanilla
- 1 cup (4 oz or 112 g) almond flour
- ¼ cup collagen peptides
- 1/4 cup coconut flour or protein powder (mixed protein source is best)
- 1/4 teaspoon salt
- ½ - 1 cup blueberries (divided)
Instructions
- Preheat oven to 350 degree F. and line a 8 x 8 pan with parchment. Make sure your egg is out of the fridge and are at room temperature. Melt the butter, either in the microwave or on the stovetop. Let the butter sit off the heat to come to room temperature.
- Once the butter has cooled, stir in the brown sugar substitute. Whisk vigorously until the sweetener is fully blended into the butter
- Add the egg and mix it in thoroughly. Stir in vanilla.
- Stir in the almond flour, collagen and coconut flour (or protein powder) followed by the salt. Once combined, fold the blueberries into the batter until evenly distributed.
- Spread the batter evenly into the prepared pan. Sprinkle additional blueberries on top, if desired.
- Bake in the oven for 25-30 minutes (depending on your desired gooeyness factor).
- Remove from oven and cool in pan.
